Can I back up iPhone directly to new Mac without internet?
I have to purchase a new Mac. My old one is no longer supported. With the new Mac’s can I back-up my iPhone directly to the new Mac without having to go over the internet?

Yes.
Local backups can be done over USB cable. Internet is not required in the least. This is has not chanted on new Macs in any way.
