Trying to add a second birthday on a couples contact and it wants to do it five languages starting with Chinese Korean etc, English not one of the five. Everything else on my IPhone 16 is english Including the other birthday that was previously entered.

I’d suggest using separate contacts for each person in the couple, and to link the contacts together using the ‘relationship” mechanism. Two or more people with one card treats mostly all as one, same as with a business or organization contact card. I suspect you’re running into an assumption of one birthday per person within a given language, here.
