I created a shared calendar with myself and one other and it has multiple events in it. If I want to either delete the shared calendar or remove the other person from it, will they lose the events in their calendar as well?

Let’s consider what “their calendar” means exactly.
You created a shared calendar. It’s your calendar. You choose how and whether to share it. You have granted others access to your calendar. If you stop sharing it or delete it, the other person cannot access it.
If, however, the other person has their own private personal calendar (“their calendar”) and it happens to have events on it that they placed there, then you have no control over those events.
