How do I restore original Pages? I don't need Creator Studio and have not subscribed but when I try to select a template for a new document, only Creators Studio templates appear. Settings > Apps > lists only one Pages app, the new one; the second, original Pages app has disappeared.

You do not need to subscribe to Creator Studio to use Pages 15.1. It is still a free app with additional optional content. Previous versions of Pages & Numbers are "end-of-life" and will not receive further updates.
The template chooser shows you all available templates. Don't choose any with the little symbol in the upper-right corner, and you're good. In this screenshot you will see templates both with and without this symbol.
How do I restore the original Pages app and access its templates?
