That has worked for me, if this makes a difference to anyone, i had a film running on the apple TV box while i carried out these steps on my MacBook.
all my films now default to the MacBook screen when i open them in iTunes.
This is what worked for me :
1-Turn wifi off or disconnect internet connection
2-play a video on itunes and when getting the error message ... select play on computer
3-Play a few videos
4-reconnect your internet or wifi
should now default to your computer

I had the same problem few minutes ago (iTunes v10.2.2. (12) ). I've fixed it as follows
- power-off ATV (full power off, "cut" power connection)
- start a Video in iTunes
- iTunes notified that ATV is not available and asks if you want to use the computer insteat. Choose "Computer"! 😉
- Play some videos (they all should be played on your computer now)
- Power-on ATV again
For me this resolves that issue! 😀

Thanks, Microview. This worked perfectly to fix the same issue over a year later in iTunes 10.6. Playing videos no longer defaults to my Apple TV.
I found out that at the bottom of the iTunes window is an airplay icon, (the mouseover text reads "Choose which speakers to use.") and if you choose the multiple speakers choice from the menu that appears you can uncheck Apple TV and check This Computer. That will change the default.
In iTunes 11, the AirPlay icon has been moved to the top left of the iTunes window, next to the volume slider. Check the Computer as default for both the Single & Multiple settings.
