Turning Airplay OFF on iPhone?

You certainly don't have to justify anything. There's still no way to do what you want.
Submit your feedback to Apple here:
Double click the home button, slide right, click the AirPlay button (box with arrow) and turn off.
If your router supports it, set up a Guest network for your son's device to sign in to, that would isolate it from all your AirPlay devices on the primary SSID.
Method 1: create separate SSID or GuestNetwork
Method 2: Switch off AirPlay service at target system (not sure if Denon support´s it, my Yamaha does)
Method 3: Teach your kid how to use it - he´s capable of starting videos by his own, he should already be smart enough to know which buttons not to press
When airplay shows up as an option on my phone, i've noticed that my browser slows down and sometimes comes to a complete halt! Doesn't matter if I'm connected (or ever have been connected to) or not. If the option becomes available, I'm screwed. Turning on and off airplane mode gives me a relief for about 10seconds.
Have you ever used it? If there is only one device available and it shows up on a regular basis, it will connect even if you tap the button only once. I have this problem a lot when watching YouTube or Netflix. It's a valid complaint.
