audio airplay is NOT something that a developer adds. this is there by default as part of the iOS APIs.
any app that offers media that has been built using the iOS 4.3.x as the base firmware has this feature.
the other apps you have tried will have been built using an older version of iOS and thus won't have any airplay features.
video airplay however is something that has to be specifically added by the developer (on both apps and website). if the developer does not add it then all that is available is the default audio airplay.
the developer contact details will be listed in the itunes stores (this is a mandatory field when uploading an app).
