If you connect your ipad to usb and set the options in control panel (equivalent for a Mac) to open the explorer interface when device is connected, the ipad can be treated as a hard drive with the following limitations. Files must be in a format supported by the folder which is a digital camera - most of which now take video as well - the folder is a DCIM under the idevice root drive. DCIM is also the root drive for memory card cameras.
There also some excellent free apps in the store, which are capable of, drag and drop, wide video format support, browser support, internet transfer support, p2p support, and a wide range of file copy and storage support modes. At least one app I use allows for video to be stored in your photoroll.
With a bit of plannng you might even be able to leave your Mac on before you go. If your destination supports your network and there is a worthwhile prepay data roaming plan available, you might be able to do some remote desktop sharing too.. I do recommend getting a prepay roaming plan. They can be tailored to the likely data limits.
Check the Data Providers international coverage pages, it may be worth just changing to s different SIM for the trip. Beauty of having a device that is fully unlocked. Best wishes.
