Suddenly, and during installtion of an appliction from the store, I was asked about the 3 security questions of my account besides my rescue e-mail.
certainly, I don't remember the 3 questions with their answers and so I logged from my computer to my apple account and I didn't find them!
So, could you solve it for me?

I think the security questions it is prompting you for is for you to answer in case you forget your password. It is not actually going to ask you these questions every time you purchase an app, but just the one time, and if you forget your password.

That's exactly correct. One exception is if you want to change questions/answers and/or password, you will be asked two questions before you're allowed to do so. In any event, it's no big deal.
I am getting that prompt too. I didn't really trust the prompt, so I went to my iTunes account online and there is already a single question defined. I chose to create my own question during initial setup and have the answer on file. Why am I now being asked to define them when I buy an app? I am not asked when updating - just when I am trying to get a new app.
Is this legitimate from Apple? I am really in no mood to have my iTunes account hijacked.

Because Apple has changed their security system.
This is a prompt coming from inside the itunes software, which can only connect to apple's servers. You can see it contacting the itunes store in the status bar. You had one question defined. It now requires three, precisely to prevent hijacking.
vulnerability is having a series of easily deduced questions as "security". :/
