Have a friend in Germany with an iPhone. When I put his phone new in the address field, the send button does not become active.

Tried that. Does not work. That is why I tried his iPhone number.
I'll have to FceTime with him to find out what he has on the phone.
Sounds like he has not activated iMessage on his iPhone. You may need to walk him through it.
If you know the emailaddress he use with iMessage then you can send him messages. did you use the Message App before?
After I FaceTime with him, I'll let you know if it works.
