This thread has beeng going on so long that it has actually become humorous for me to follow now that I have given up any hope that Apple will pay attention.
I agree with KHuhn, there is no point messing around with the cellular (3/4G) settings when the problem occurs across multiple iOS devices including my kids iPod Touches (no 3G to turn off there!!!)
Nothing I have tried works consistently - but for the sake of posters following me, I have summarized this post into the things that people have said works as a work around (note - none of these are fixes - just work arounds - Apple needs to FIX THIS PROBLEM).
What we know:
- Problem is not specific to any Apple iOS device - occurs on iPod Touch, iPad, iPhone (various generations)
- Problem is a problem - as it WAS working, and now its not after ITunes upgrades
- Problem is not O/S Specific - it happens on MACs and PCs
- It happens whether or not you use wi-fi directly, or connected through a router (it used to work so why do we need to change our behaviour here Apple? even if that were correct)
- syncing by cable generally will always work - its a wifi only issue - though I have had one example of this process corrupting a iPod Touch to the point that a full reset was the only way to fix it (it would not forget a sync in progress, no matter how many times we powered off and on and tried to restart a sync).
- Windows Firewall is not the problem for most people - the same issue occurs even if all firewall's are disabled
- Any work around appears at best to be temporary
The more likely paths to resolution:
- khuhn says disable ipv6 - that may well be a possible workaround- however I had IPv6 running on windows well before this issue arose, and I don't want to disable IPv6 for long term solution
- AppleMobileDevice service eventually consumes large CPU time - restarting it makes some of our devices appear and work for a short while
- amrobx has downgraded all the way back to 10.6.3 which is now recognised as the last working version of iTunes (see people - nothing to do with IOS version, or device type - its the ITunes version!!) Its working with iOS 5 and 6 - but not sure it will work with newer generation devices
- Apple has said that it will only work on windows with a computer using wireless, not wired. This doesn't mean adhoc direct wireless connection as some people have posted - this doesn't make any difference for me
- For Mac users : Article #HT1747 - iTunes: How to remove and reinstall the Apple Mobile Device Service on Mac OS X 10.6.8 or Earlier - This has had some success apparently
- After restarting the PC (which is same as restarting applemobiledevice service really) there maybe some evidence if your pc doesn't go to sleep, or hibernate - it will keep working - perhaps consider switching off the setting to allow Windows to power down the network card to save power
- some people say that removing the dash from the computer name if you have one works - however I had no dash - same problem (this work around may be Mac specific).
- fapapa says setting the hostname on a Mac solves the problem - ( scutil --set Hostname "your-macs-name" ) - though it may have just been the reboot after that solved it temporarily as others have since indicated
I maintain the most frustrating part of this is the lack of any intelligent responses from Apple - whether it be through acknowledging the issue, through phone support, or through their (not so) Genius Bars.

Am I just being sceptical, but could it be that Apple just want everyone to use iCloud?
Might be something to that afterall - Apple don't appear to be too concerned about this problem after almost 3 months, 62000+ views and 250+ replies - oh and at least 3 Itunes updates since the original post.
