Well Guy's, I am finally there, Retina EFI update installed and Partitions all back in place. If it helps anybody what I had to do was ;
1) Purchase winClone to backup by Bootcamp Partition. I also purchased iPartitions which was a waste of time as I could not do anything with it because I couldn't get my mac to boot up from USB from their bootup disk etc, so loggin in using the same drive meant everything was disabled.
2) Delete the BootCamp partition using Disk utiloity and move everything back onto the Macbook Partition.
3) Verified disk and permissions were ok now that I only had the one partition back, all ok.
4) Installed the EFI update, went through first time no problem this time.
5) Create a FAT Partition using Disk Utility for same as Windows Bootcamp was before.
6) Use WinClone to restore the original BootCamp Image over the top of the newly created Fat32 Partition.
7) Delete Parallels Virtual sever and re-assign to newly created Bootcamp Partition.
JOB DONE.
