I am trying to make a formal complaint to Apple, but it seems impossible to find an email or snail mail address to which I can send this letter.
I don't want to use the "feedback" form on the website as I don't think this constitutes a complaints form.
UK law states every firm needs a complaints procedure, but I cannot find it anywhere for Apple Inc (UK)!
Hope someone can point me in the right direction!

Most likely because any email address posted on a public forum is liable to be harvested for tons of email spam.
Email addresses are typically removed from posts for personal safety and privacy reasons. Spamers and others monitor discussion boards such as this to get personal email addresses.
Could we therefore put Joe.Bloogs at someemail.com instead?
Sure, although I'm not sure what purpose it would serve.
