Neil,
I have the same problem. Makes my Ipod virtually useless if I cannot update.

Can you see your iPod when you enable View - Show Side Bar ? (Shortcut Ctrl + S)
Yes it is visible top right on menu bar
I'm having the same problem with my classic 80GB ipod. When I went to update a playlist, I was told the ipod is synced with another iTunes library (it isn't), so against my better judgement I allowed iTunes to erase and sync it. Itunes can sync videos and audiobooks, but I won't sync my music. I press the synic and it says sync is complete when it never even started. So now my iPod has no music on it at all.
Okay, the issue seems to be when "Enable Disk Use" is checked. When I turned it off and selected manual sync it restored my music (or in this case is in the process of restoring my music).
Tried it and it worked... THANK YOU. Now to get the auto working.
Updating OK now ... Problem solved BIG TKS
For me, the issue was resolved by quitting iTunes and shutting down my phone. Then opening itunes, waiting for it to load, then turning my iPhone back on (while connected via usb). Now its backing up and sycnhing properly.
I have the same problem, but I can't even see my iPod in the side bar - and it's not showing up in devices either.
It's plugged in properly and all that, because it's charging while it's plugged into my USB port - My iPod was syncing fine before I upgraded to iTunes 11.
Any ideas?
This solved it for me:
Right click 'Computer' then click 'properties'
From there click on 'devices'
For me the ipod showed up in the list but it had a yellow triangle with an exclamation mark in it (you may have expand the option 'disk drives' to see it)
Next you right click on the ipod and 'uninstall' the driver.
After it's done that it should automatically reinstall it, or you can hit 'update driver software'
My ipod then showed up in devices &, more importantly, synced with the new itunes.
Hope this helps.
Itunes worked perfectly, everything was nice synced on my ipod classic 160GB. With itunes 11, it got a lot of problems. The Syncing proces stopped at track nr 2 for hours and did not go further and after all my ipod did not has any music anymore.I did all of the above things and more, like
1) Reinstalling itunes, and it failed
2) Did the apple instructions on http://www.apple.com/nl/support/ipod/five_rs/classic/ and it failed.
I have no songs on my pod, syncing stll remains stuck at track nr 2 and don't know what to do anymore.
Do I have to go to windows 8?
Do you have the "convert to 128k AAC" option acivated? This seems to cause some trouble with iPod syncs. Apart from that, my Nano always got stuck at track 2 as well...
I convert it to 256 aac and did not work. The lossless version is not working as well
Ive tried every Troubleshoot option and step to get it working and it will not Work, Ive tried Resetting it everytime I reset it the only thing it will do is Display the APPLE sign intill the Ipod Dies. Ive Tried Disk Mode and it won't do anything accept say "Ok to Disconnet". I reinstalled the drivers on my computer and that did not help, I even restarted my computer. The device will not do anything. Ive tried this on 3 computers and it will not do anything.
It will Not show or connect to Itunes...
Are there any other suggestions?
Thank you very much. I worked for 1 1/2 days to get my Ipod Classic to Sync with the new and dumb ITunes 11. Your solution was perfect... Thanks for sharing.
