I was wondering is there a tutorial, apps that are key to allowing a large number of ipads to connect to a windows environment seamlessly so staff can just access their native file shares, over corporate network or via VPN.
We want to avoid deployment windows 8 surface at all costs!!!!

Comes as a virtual appliance which you can run on a standalone box or one of your domain servers and just point your iOS devices (or any other device using a browser) at it.
The Foldr iOS app allows upload/download obviously and offline storage of files downloaded from the network, will also accept the output of any app that supports 'Open In Another App'. No VPN requirement either for access from home.
iOS does not natively connect to file shares or active directory. There are third-party apps that do; FileBrowser being the one I'm most familiar with:

None will fully bind an iOS device to AD, but they might work for you.

All of the "Office" document editing applications on the iPad have limitations. Best try them out to see if they meet your needs.
