I just had the same problem. The issue is that the OSX Mail client doesn't save sent mail in the "Sent" folder by default. Instead it creates a different folder called "Sent Mail". This is kind of silly because almost every other client I use uses the standard name "Sent". The solution is two-part:

First, make sure your client is configured to save sent emails:

From the top menu, select Mail > Preferences... > Accounts > Mailbox Behaviors. In there, make sure "Store sent messages on the server" is selected.

Second, choose which folder it'll save them into:

1. On the lefthand folders panel, select the folder that you want to use as your "Sent" folder.

2. With that folder selected, choose Mailbox from the top menu

3. Near the bottom of the dropdown, select "Use This Mailbox As"

4. Select "Sent Mailbox"

Voila! Now all your sent e-mails will be stored in the folder of your choosing. You can also change the behavior of other folders, such as Drafts, Junk, Trash, etc.
