How to create MP3 version?
There used to be the possibility to right-click on a song, or a whole album, and create my songs in MP3 as well.
This possibility is not there now, so what am I supposed to do?

I did what you instructed and it works perfectly. However, it's not clear to me if I leave the setting now with MP3 as per instruction whether in future it will download only MP3 because I need both?
That option applies when converting songs or importing music from CDs and can be changed as desired. Music purchased from the iTunes Store will always be downloaded as AAC; songs from podcast episodes or other sources will be in their existing format.

You do not need both. Virtually every player, program and device, including iTunes, iPod, and iPhone, can play MP3. There is really no need to keep an AAC copy.
Going forward, make sure that all music you rip, purchase, or otherwise acquire is in MP3 format.
