The point of the iPhone is that it is many devices in one.

It is a phone, an iPod, a gps unit, it provides access to e-mail, the internet, your contacts, calendars, pictures, and more

Yes, but functionality with the mic and controls will be limited. Of course, you can unplug the earphones for any reason, but if you use the set that comes with it (mic and controls built in), there would be no need to unplug them. They work for phone calls as well.

as to your original question, pretty anything you can do with an iPod, the iPhone can do as well.

If you visit an Apple retail Store they will be happy to demonstrate all the features and help you in the correct choice of iPhone

At least as good if not better. If you want better audio quality, and are willing to pay for, there dozens of earbuds with mic and controls on the market that work with iPhones. Apple actually carries several.

The new earpods that come with Apple products are much better than the previous earbuds.

The iPhone has the same quality as an iPod. In fact its essentially an iPod Touch with Phone features. The Phone does not remove, or reduce any functionality quality or features the iPod had, it simply adds more. In most cases the iPhone will have better sound quality than an iPod.

You can buy high end 3rd party earphones to improve sound quality even more. Things like Beats by Dr. Dre earphones and headsets if you want to.

Sennheiser, Bose, UltimateEars, Parrot, Klipsch, AntWireless (there are many more). Many are also available as BlueTooth, meaning they don't need to be plugged in to work.
