I've updated to iOS 8 this afternoon and now the mail app crashes. It will open the first time after a power off and restart of my 4S but after that first time it will crash every single time I try to open it. I can only reopen it after I've done a full reboot of the phone, and then only once. Is there a quick fix or do I get to wait for an update?

I have the same problem on a brand new iPhone 6. Email app crashes constantly. It's frustrating that something so basic doesn't work well.
In settings "Mail/Calandar, etc..." I saw 2 profiles for the same email account one of which was inactive. Deleted the inactive one, rebooted PROBLEM SOLVED.
Extra account may have been created by MS Outlook app. I deleted that app first.
I also had two hotmail accounts ... deleted one. Now it seems to be ok!
I did as hurleyjr suggested.
In the iPad I went to Settings, iCloud and turned off Mail.
Thus far my Mail has not crashed since doing this.
Sure hope this helps others.
Can not believe Apple has not addressed this issue.
I have an iPad 2 and i upgrade to IOS 8.3, the mail app was working fine for one week and after it crashed. It continues crashing after trying a restart, close the process and stuff like that. I didn't want to do a backup of my device so I try the last thing, delete the accounts.
I used to have 3, so I delete the fist one. It crashes again, but i opened again... and surprisingly it works.
I have added the account again and the app is working right.
I hope my experience would be useful to someone.

this one worked for me.
i Had a lot of mail and the app seemed to crash while it was indexing it.
i changed the number of sync day s from unlimited to one day. Now it works again.
ill try to go back and increase the number of sync days now.
Once I did this it was no longer possible to select unlimited. The most I could now select was a month. So that may have the problem. I had a value for a parameter which the app no longer recognises as an option.

I have my EE degree ever since MicroSoft 3.0 appeared.
Ok...my mail app would open and close instantly over and over...I did everything everyone suggested (reset, delete emails, etc...) but I finally figured out what MY problem was.....NO STORAGE ON MY PHONE LEFT! Once I deleted some videos on my phone to free up space...mail app works perfectly fine again....maybe check your storage and see if that could be your issue also.....good luck
I was having all the same troubles and nothing that was suggested worked.
I then noticed that there was an error log on my phone where "mobileme" showed up a few times.
I couldn't find anywhere that this was causing my trouble. After researching "mobileme" I found where to disable it from the addins on my home computer as from what I read, it wasn't needed.
Following disabling the addin, my iphone mail worked again after about 4 months of trying all suggestions...
