Called Apple, and this in fact is NOT A BUG - but an enhanced Siri "feature" in iOS 8.X. The weird part about it is... it does not happen on all my contacts - only seems to happen on most of them? Anyone else experiencing this weird behavior?
So that begs the question - if it is an enhanced Siri feature - then why doesn't she confirm on every contact not just some of them? And why does the editing the number work for a day only?

Reset the device:
Press and hold the Sleep/Wake button and the Home button together for at least ten seconds, until the Apple logo appears.
If that doesn't help, tap Settings > General > Reset > Reset All Settings
No data is lost due to a reset.
I found this thread that fixes it:

You change the number for the contact you are calling and then change it back again in contacts. It fixes it.

Yes. I admit that it now no longer works for me, other than temporarily. Very frustrating. I have random contacts where Siri asks "just to confirm...". Makes me want to throw the phone sometimes.
Wow. Can you imagine if we are asked to confirm everything?

Sort of makes Siri a lot less useful... And now the adding a new number and saving it and then deleting that number... no longer seems to work..
The odd part is I have a few contacts that she does not ask to confirm on - any idea why this is?
No clue. I would like to know and use to potentially disable too. I've scanned some of the contacts, and I can't see what is different about them.
For some reason this only seems to happen on majority of the contacts... not all - and the number trick to fix the issue -- no longer works! Also have tried to reset all settings as well as reboot/restart the phone a few hundred times... NO DICE!

I think I may have found somewhat of a workaround. From my testing, it doesn't happen if the contact is in my Favorites. Doesn't matter whether the person has one phone number or multiple, I get no "just to confirm" if they're in my Faves...
Hopefully someone else can confirm this. And I recommend we all head over to http://www.apple.com/feedback/iphone.html to let them know how we feel, and ask for the option to turn it off, at the very least!

Carolyn, this is crazy! It isn't an issue requiring a reset of any kind! It's a new "feature"... Did you do any research before you posted your suggestions? It's all over the place, from here to Ars Technica and beyond. Why make someone go through the hassle of resetting their settings?

Yes, adding favorite has worked for me in a quick test. I will report back if I have an issue.
Yes I can also confirm that if you add the contact to your favorites it no longer prompts you..
