since updating to 8 the keyboard covers text fields that I am typing into

If you want a split keyboard at the bottom of the screen place your fingers on the keyboard and swipe apart, see screenshot.

Turning predictive off and then on again AFTER the hard reset worked for me. Even the auto scroll up of the text box being edited.

Try this: Press and hold the keyboard icon on the bottom, right of the keyboard and select "Merge and Dock" on the popup. The keyboard should then dock to the bottom of the screen where it belongs. ****
