I'm also using an iPhone 5s whose screen had changed to Black & White (monochrome, greyscale). Colin1069, your fix helped me too. But afterwards, I also had this little movable window stuck on my screen. I triple tapped the screen to bring up the Zoom Window and Window Zoom had been turned on. This allows you to see portions of your screen while zoomed. BTW, when "Full Screen Zoom" is an option from the menu, this means if you select this option, it will be active so when you see it, "Full Screen Zoom", it's in Window Zoom mode.

I have exactly the same problem (but on an iPhone5S on IOS 8.3). I restored as a new device (just restoring the software didn't fix it). After restoring the device (as a new iPhone), the problem was fixed, UNTIL i then restored a backup, after which the problem came back. This lets me conclude that my iPhone isn't broken, but it must be related to one or another app installed. Is that possible?

This just happened to me this morning using iPhone 6 Plus IOS 8.2. Deselected the window zoom and it fixed the problem straight away.
Must be a bug that isn't sorted yet.
Actually I now don't believe it's a bug.
If you have selected to use Zoom on your iphone, you can triple tap the your screen to bring up the zoom options. In these options you will also find "Choose Filter". If you select this you will probably find a tick next to "Grayscale".
Select "None" in this window and the problem should be solved.
This problem was fixed in the same manner on my iPhone6, thanks to you Colin! Tree repeats on the home button and then uncheck the zoom option under the preferences. The only thing is that now It´s not possible to use the zoom without all of the screen turning B&W again. I guess that problem will be solved in the next update from Apple?? Support add this to the BUG´s list! 😉

I just got my brand new Iphone6 128 on IOS 8.3 this week and got the same bug.
The solution described by Collin works well (merci beaucoup !) but the bug is still there when we reactivate the zoom the screen turn B&W again.
FYI, my problem occurs after a shutdown following a fast battery discharge,
Post scriptum: of course the box gray scale was not ticked and trying to tick or untick it does not change anything. It is a real BUG
FYI , "Press and hold both the Home button and the Sleep/Wake button" DOES NOT solve the problem
In ios 8.4 it's not so much the zoom but the gray scale. Go to Settings-General-Accessibility- Zoom can stay on. Just make sure that gray scale is turned off. That will then give you color again.
This just helped me as solved the issue as well. The worst thing people could have done used to be butt dialing when they put phones in the pocket. Now all kinds of things can happen to your iPhone when you put in your pocket without turning off the display first. I had apps deleted and spent hours trying to remember what app was missing. Now, the display can turn black and white just because the wrong option was accidentally activated when the phone was rubbing around in my pocket with the display on. Remember to turn off the display before putting away the phone in your pocket.
Well done, colin1069. My screen also went b/w for no apparent reason while I was reading something and just turned the phone over. After searching what seemed forever for a solution other than driving 90 miles to an Apple Store for assistance, I found and read your post. It worked immediately. The Genius Bar could use you! Whew, Colin, you just saved me so much hassle. I would never have found that the zoom was the issue. Unbelievable. I felt like was in a bad episode of I Love Lucy...all things black and white.
I Had the same issue and just found the setting to fix it. Tripple tap to bring up Zoom controls (make sure zoom is ON in accessibilit) then click on CHOOSE FILTER and make sure it is set to NONE. 😀
