FaceTime only an option for some contacts
Wht do some of my contacts give me the option to FaceTime but others don't?

I have finally figured out what Apple could not. When you have a greyed out face time icon and cannot connect to one particular person, HERE IS THE FIX!!!!!!!!!!
Remove that persons email and exchange it for THEIR ICLOUD APPLE ID. Problem solved!!!! You can now access the FACE TIME icon that is no longer GREYED OUT!!!!!

This is my experience as well - exact same scenario.
Will have to try it
Edit their contact to a phone number that has an Apple phone and see if it appears
