Just to provide you with an update after my contact with Apple engineering / support desk.
Apple Engineers have now managed to duplicate the issue with mis-formatted emails in iPad Pro, and it has been raised to software development for email application on iPad Pro.
There is no immediate fix in place just now for the formatting, but it has been raised, and it WILL be resolved in a future release / update of software to the iPad Pro.
In the meantime, they have asked if we can persevere, and utilise the Pro 'split screen' functionality wherever possible to alleviate the email display problem.
So, to summarise, they now know of the problem, they can now replicate the problem, and it HAS been raised with their software developers as a bug to be resolved.
