I love how my course are organized on my phone, but hate the way their organized on my MacBook, iMac. But why is it that my iPhone courses and materials are not showing up on my MacBook?

The iTunes U functionality in iTunes for Mac only handles iTunes U Collections, while iTunes U for iOS supports both Collections and Courses. If you browse the iTunes U Store, you can see different sections for each type, with different visual treatments for the two types.
