I unchecked the box that says documents and desktop from my system preferences in iCloud, but it keeps trying to upload my whole computer and gobbling my entire cloud. If I turn off the cloud it erases ALL my files.

Did you try this - Copy the files from iCloud Drive to a folder other than Documents and the Desktop. Then turn off syncing.
Do you really think that access to your files should be had without the password that protects you from others accessing your account?
I guess we aren't communicating on this. I was talking about a procedure not passwords. But thanks for replying.

Not storing them there in the first place is another, and better way.
I actually called Apple for this and they guided me through it as I was understandably very nervous to delete them all from my computer! They were very helpful and it went relatively quickly.
I dont think that you understand what it is you are asking for. You are asking for files to be available once you have signed out, if that were possible anyone with a computer and an internet connection could get them. If that does not bother you there is still no way to do it.
