When I cover the pinhole above the volume buttons and try to record something, you cannot hear the recording, as soon as I uncover the pinhole above the volume buttons, you can hear the recording. If the pinhole to the right of the camera was a microphone you should still be able to hear my recording, yes?
Hi lericksen7. Perhaps you don't have an iPad Air 2. This link: Identify your iPad model - Apple Support shows the configurations of all the iPads. On my iPad Air 1, the mics are in the center of the top edge, one on the edge, the other on the back just below.
Do you have a case over it that may be obscuring the microphone?
All iPad 2's I've ever come across have 2 microphones as stated.
1 above the volume buttons, and the second one next to the camera on the back.
Are you saying there is no hole next to the camera on the back?
Perhaps if you post a picture of your iPad from the back we can confirm what you see.
No. The Microphone next to the camera is a noise reduction mic. It is used to improve the sound quality of the recording form the side mic on the fly. Covering the main mic on the side means the actual audio is not recorded.
It's still a mic, its just not used for what you expect it to be used.

Maybe, maybe not.
But that is not the point. Both pinholes are microphones.
Whether they are used or not at a specific time is not important. They are in fact microphones:
The iPad Air 2 has 2 mics.
Once next to the Camera, and one on the side above the volume buttons:

Another site from Apple that shows the air 2 features: https://www.apple.com/il/ipad-air-2/specs/
it should be at top centre of your iPad atleast for Cellular option iPads
This is not the case for the iPad Air 2.

Yes it is. I also have an iPad Air 2 and the microphones are in the same place as what Phil0124 is telling you.
It does not have cellular; Wi-Fi only
I have an iPad Air 2 with Wi-Fi only. Model A1566, 16G
The only microphone is above the volume buttons.
This is Wi-Fi Only, model A1566, 16G. There is only one microphone and it is a pinhole above the volume buttons.
Just to clarify, if I have noise in the background and I cover up the pinhole next to the camera I should hear a difference in my recording, is that correct?
