I just updated my iPhone 7 to iOS 11 and Apple maps won’t open, whenever I tap it the screen goes black and it just goes back to the home screen
Force Restart the iPhone. Once it restarts, Tap on Settings > Maps > toggle the 'Cellular Data' a couple of times and check if it works for you.
Nothing works for me either...same problem. Everything except maps works. I will more or less have to try the fix above since nothing else works: let it be over night and see tomorrow. Probably Apple will release a new iOS version soon.

Not sure what happened but I left my phone over night and when I woke up in the morning it started working
The same thing happened to me very late last night. The Maps app just started working again.
