After upgrading my iPhone 7 Plus to iOS 11, updating people (i.e., face recognition) takes forever in Photos. Leaving the phone connected to power and locked all night doesn't resolve this.
Is this normal?

Wonder if you ever resolved your updating issue. I had the same issue but today I resolved it. Hope this works for you if you haven't.
Today I noticed a few People would say "Review" on the top of screen after going into a specific person. So I went thru all the people in the album and clicked to review wherever it popped up. Locked and plugged. Within 15mins the Updating is gone at the bottom of all the People as well as in each specific person.
No, that hasn't worked for me. I often check faces to see if photos need reviewing and it's made no difference. It still says I need to plug the phone in to finish updating. The phone has been plugged in every night since I purchased the iPhone last September. Four months ago! Something obviously isn't right with this feature.
Also having this! It's been updating on my iPhone 8 Plus since I bought it (a week after its release).
My iPhone 8 still says it's 'Updating People'... 51 days after it started. Surley that can't be right!

Approx 65k photos. Still the same massage, despite may nights plugged, in and locked.
Did you contact apple support in the end?
I've only 70 pictures in my iPhone X... It doesn't work at all
Where's the option to "remove identifying by name anyone with only one photo" ?
This is in fact a major issue. In my IPhone 5SE I am on 2000 out 70 000 after one week. I decided one week ago to upgrade my Photos to iCloud, to optimize space and sharing, but this is crazy. I understand the option of making the recognition on the devices instead of doing it on the cloud (as does google) for privacy reasons. But some processing features should be shared between devices in the same iCloud account in order to avoid the recomputation on all devices,... this way it seems dumb. And something is in fact shared, since the persons are automatically created and shared between devices, but not fully updated. Or so it seems...
Yes, depending on how many photos you have and your internet connection of course! Mine took the bast part of 24 hours with 100/40.
