I am having this same problem, started yesterday October 30th, 2017. I am using these keyboards:
- English (US)
- Spanish (México)
- Français (France)
- and Emoji.
The autocorrect for the ‘I ‘ happens in all languages. I have already tried resetting the keyboard dictionary and checking the text replacement shortcuts, as well as reinstalling apps and doing a soft reset but this seems to be an iOS issue not an app issue.
Just updated to 11.1, issue is not fixed.
I identified the characters replacing the letter “I” as the following sequence:
As character names:
U+0049 LATIN CAPITAL LETTER I character U+00EF LATIN SMALL LETTER I WITH DIAERESIS character (ï) U+00B8 CEDILLA character (¸) U+008F character ()
As raw characters:
Iï¸
Additionally, there must be some relationship with Emoji because my Emoji keyboard now show this as the most typed emoji, and when I touch that emoji, the inserted characters are exactly the same sequence as the autocorrected one:

The update is irrelevant, but Apple put this out about the problem. Try it

Have any of the people posting here deleted any data from apps recently (in Settings>your name>iCloud>Manage Storage)? Like TextInput, Secure, or Profile?
Have you all tried resetting your device:
- On an iPhone 8 or iPhone 8 Plus: Press and quickly release the Volume Up button. Then press and quickly release the Volume Down button. Finally, press and hold the Side button until you see the Apple logo.
- On an iPhone 7 or iPhone 7 Plus: Press and hold both the Side and Volume Down buttons for up to 30 seconds, until you see the Apple logo.
- On an iPhone 6s and earlier, iPad, or iPod touch: Press and hold both the Home and the Top (or Side) buttons for up to 30 seconds, until you see the Apple logo.

But ef b8 8f is actually the utf-8 code for the character U+FE0F, variation selector 16. A main purpose of this character is to signal emoji presentation of whatever it is attached to.

Why Apple's autocorrect is doing this is a mystery.
Still having this issue. Also use my phone for business and yes it is embarrassing but l have noticed a lot of others having this issue. I’ve reset my phone, updated my software, and tried anything I’ve seen offered as a solution here with NO AVAIL. But getting pretty good at trying to avoid using the letter. In some cases l have used lower case L like l have in this post 😂
I spoke to Apple and got a temporary fix for this. Go to Settings > General > Keyboard > Text Replacement. Add a text replacement where the phrase is "I" and the shortcut is "i". That solved it for me.
My phone just started to have the same issue. I am sure that Apple will put out a fix to this but temporarily I suggest that you go to settings>general>keyboard>text replacement. Add "i" as a short cut for "i". This way you'll be to type normally.
I had this problem last week! I called AppleCare and they were not even able to solve it!!! We had to resort to restarting my entire phone....still didnt work! You should try going to general>keyboard>text replacement> tap on the plus> in the phrase type a capital I then in the short cut type a lower case i.
Not sure if this solves anything but I saw it on twitter by buzzfeed to try it! It's all over the internet now! It's a horrible bug lol
Mine is actually eating other words, too. It’s eaten “FB,” “1030PM,” and other random words. I can’t see it, but my recipients are sending screenshots of my messages with gaping holes where words should be. Started at the same time as the “i” substitution.
I have noticed everyone having this problem. I have not updated to IOS 11 yet and I am still on 10. I am not having this issue so it must have something to do with the new update. Apple always has major bugs for the first few months after releasing big updates, so hopefully this will be resolved soon.
Can’t type the letter I️ , showing up weird. A little box or the letter A and a question mark inside of a box.
