Do this. It works and you’ll still have pedictive text.
Turn off auto correct. ;)

If you type the letter “i” and it autocorrects to an “A” with a symbol - Apple Support
settings>general>reset>reset keyboard settings.

What keyboard are you using? Have you tried to change the keyboard?
I am having the exact same problem as all of you. Any word from APPLE on why this is happening? It's really annoying.
Are you guys all on iOS 11.1? Did the issue start after updating?
My issue started while on iOS 11.0.3 on an iPhone 7 Plus.
I am about to update to 11.1 and will report back.
I have had the update for a while my keyboard started doing that with the letter I Sunday ! I’ve tried resets and it doesn’t work still.
Can’t type the letter I️ , showing up weird. A little box or the letter A and a question mark inside of a box.
