No, it happened to me on before iOS 11.1 and even with the update the problem is still there
I tried this fix and it says you need 2 characters in the replacement field. How are you supposed to get around that?

Phrase will not allow a single character. I tried adding ““I”” and this is what happens.
Mine started pre-update and continued afterward. Though oddly after the update sometimes it looks okay to me but my recipient sees the A + ? on the other end.
I tried Everything and this is all that worked
Settings>General>Keyboard>Text Replacement
Once you get there press the + on the top right.

Does that include the update 11.1.1 which Apple issued Nov 9 to fix this problem?
There is an update for iOS 11.1.1, they put this up about 2 weeks ago and it fixes those issues
Not sure if it had anything to do with the recent update but I did notice that it started doing this to me after I increased my text size with the settings in accessibility

In fact is was resolved via update 11.1.1 more than 10 days ago.

Please note that there is an update to fix this; I posted about it the other day.
Can’t type the letter I️ , showing up weird. A little box or the letter A and a question mark inside of a box.
