HRV on my Apple Watch?

HRV / Heart Rate Variability is reported via the Health app on your iPhone:

On your iPhone, in the Health app, go to: Health Data (tab) > Heart > tap on Heart Rate Variability.

However, note that HRV measurements are not currently available in China, Malaysia, South Africa or Turkey.
