If I update iOS on iPhone will I be forced to update iTunes on laptop?

I am running iOS 10.3.3 on both my iPhone and iPad. I'm starting to notice glitch things probably because apps are updating for iOS 11 and I haven't updated my devices. If I update iOS on my phone will I be forced to update the version of iTunes on my MacBook Air? I don't like the new iTunes. I want to manage by books, apps and music all in one place not multiple locations. I am a die hard apple fan but this change was really just stupid. I went through great effort to restore an older version of iTunes when my laptop automatically ran an updat last year. I'm afraid updating iOS will also force me to update to new version of iTunes which I am adimently against.

Managing apps in iTunes has become impractical thanks to app thinning. It's no longer possible to download an app to an iOS device, then import the app to iTunes from the device itself as the downloaded app is not complete.

If you update to iOS 11, you will need iTunes 12.7 on your computer.

Not updating will leave you vulnerable to a number of security risks.

Ok let's assume I suck it up and manage apps in the cloud. Do you have any suggestions on how to manage books? If I have deleted the iBooks app from my MacBook Air (which I did over a year ago) will it allow books to remain in the new iTunes? The iBooks app does not have the ability to edit the metadata like iTunes does. This is very important to someone like me with almost 400 books in my library. I tried iBooks (before I deleted) but it is very limited to a few fields and in iTunes I can change any of the info I want.

Thanks for the help!
