The newest iOS 11.3 update enables a feature that asks if you're sure you want to delete a text message/iMessage once you choose the delete option. It's making me crazy! I tried searching through the settings to remove this deletion confirmation, but can't find anything on the topic. Is there any way to remove this feature?

No, Apple doesn't consult with users. Instead, they see what users do with their phones and often introduce features based on what they perceive as a real need. This is one such feature. Daily, multiple users come here to these user only forums begging for help to recover an accidentally deleted text message. In most cases, the only way to get the message back is to restore from backup, which often people simply don't have.
So, this very small change was introduced to help the countless thousands of users to ensure when they use swipe to delete that they truly do want to delete the message.
Are you aware there is another simple method to delete messages that will not ask you to confirm you want to delete? Yes, Apple provided the best of BOTH worlds to users. Simply use the Edit/Tap Messages(s)/Tap Trash icon and voila, message(s) delete without confirmation. That can't be any more cumbersome could it? It's three steps, just like it was before on swipe to delete.

It is obvious that you didn't read the thread before posting. If you had, you would know 1) why the feature was implement and why it's important and 2) that Apple isn't reading here for suggestions.
I leave it as an exercise to the reader to go back through the thread to find the link to the feedback page to let Apple know how you feel.

To play devils advocate here, I think the Jaked up version of the ASC software causes many of these posts. If you notice georgev2 replied to the OP. If you go to this thread you see the OPs post and then 3 helpfuls (?) that agree with the OP. Scroll down and you get the read all replies. If you aren't familiar with the system you would tend to skip that button and click on Reply to the OP.

I was not attacking you. I was making an observation.
I've discussed with the Hosts that the current implementation doesn't encourage reading the whole thread. However, all it takes is scrolling to the bottom of the first page to see the "There's more to the conversation. Read All Replies".
I think it's more of a generational thing. And, by generational, I don't mean chronological age, I mean when people first came to the online world. It used to be standard etiquette (and was often posted on the home page) that you should read and lurk for a while before posting, that by doing so, you'd often find your answer or realize that your observation had already been posted a dozen times. Ah, well.

I agree on all points. What might be a remedy with this one is to mark one of the replies that points out using the Feedback link, giving it an Apple Recommended and moving it to the first page under the OPs question.
I totally agree I thought I was losing my mind I’ve spent hours looking for the button to turn off the idiotic response. We should be given the option to choose how we want to delete OUR messages on OUR phones.

This is super annoying! I just updated yesterday and ran into this confirmation absurdness. I’m someone who deletes txt threads regularly to keep things neat and organized. Adding the extra key stroke makes this extremely unfluid. Hope they give us an option to remove the confirmation. 🏻

Oh yeah, yet another poster who didn't read past the first post to see WHY Apple did this, or how to actually tell Apple what they think.

And you are taking this way to personal. Chill today will end and tomorrow will come. Is there a solution to the problem that I didn’t see? I’m not going to read through 90 pages of forum to find the solution.
A- I don't think it makes them "look silly" at all. (Though I can't actually see them to verify) and B- I think everyone that flips out over; who reads what, phantom "rules" of a discussion board, and/or everyday life in general should worry more about what they look like than others.
