Delete books in ibooks
I would like to delete books from iBooks and from iCloud on all of my devices

You can delete downloaded books from the bookshelf in the app via the Select button top right of the bookshelf in the app on each device. In terms of deleting them from the cloud, you can't if they are iBookstore purchases, you can only hide them from the Purchased section : Hide and unhide music, movies, TV shows, audiobooks, and books - Apple Support
