Apple Classroom- locking students into something to write an essay

We are trying to find a way to lock high school students into writing an essay. If we lock them into google docs they can still get into all their docs and copy and paste or turn in a previously created essay. Has anyone found a way to make this work?

We actually ended up signing up with a 3rd party service called DigiExam. It does exactly what you want to do, locks them into an app for an in-class essay and collects it for the teacher. I have not found a way to lock them into a specific document in any word processing app. They can always access other documents that they previously created in that app.
