Turn WiFi off in the phone settings, restart the phone, turn WiFi on again and then try to update again.
If that fails and if you have a computer running the latest version of iTunes, try the update there.

You have to have your iPhone connected to Wi-Fi. 🙂 Sometimes it takes a while for the update to finish 'requesting.' Worst case scenario, restart your iPhone and try again.
