Why should I trust Apple when they entrust my private data to China?

When I store my private data with a company I assume it will be stored within my country, or at least a country that subscribes to laws pertaining to data protection and human rights. With Apple's move to store iCloud data in China, I am sure I am not alone in being very concerned about the security of that data given China's appalling record of human rights violations and blatant denial of information to their citizens. Will Apple please explain why Apple customers' data will be somehow magically immune from the corruption of such a totalitarian country and why we shouldn't just boycott Apple products entirely?
