Why does my iPhone 6s Plus aske for husbands password for when updating Apps?
I am using iOS 11.2.6 version
Because those apps had to have been downloaded under his Apple ID, not yours. Apps are forever tied to the Apple ID they were downloaded under. You can set up family sharing or if you don't want to do that, you should delete the apps and then download them under your Apple ID.
His Apple ID is stored inside them. They need to be updated from it or deleted and redownloaded.

The apps were originally added with my ID & Password... He just received an iPhone 8s+ this past week, he has never had or used some of these apps... help!
