How do I adjust camera for low-light conditions?

I stream DJ shows on social media. My camera is above large, dark rooms. I can see what's happening, but the camera keeps hunting for better light, going in and out of focus. How can I set my camera so it shows what I can see, and stops going in and out of focus?
