App Store subscription 2/3/18 YouTube Red $14.99

I didn't authorise this and cannot unsubscribe. Think it is scam

but can't cancel. What do I do?

It is a phishing email there isn’t anything to cancel. To check the email (does it have your billing address from your account, and not contain spelling or grammar mistakes ?) :

Genuine iTunes emails : Identifying legitimate emails from the iTunes Store - Apple Support

Viewing an account's purchase history : See your purchase history in the iTunes Store - Apple Support
