Change to Australian spell-check in Pages

Total Mac newbie here. I need to be able to change the language in a Pages document from American English to Australian English without changing it across all documents or across the computer. In other words, I need to set a document so that spell-check will highlight a word like "personalize" when, in Australian English, it should be "personalise." Is there an easy way to do that on a document-by-document basis?


As best I can tell, this computer has OS 10.12.6. Thanks so much!

The Australian Dictionary does now recognise words like Anzac, jackaroo and brumby that it used to not understand but it still is substantially short of the Macquarie Dictionary.


A short list of Australian words it does not understand:


bottlo firie chewie choko carrybag roadtrain sunbake teatowel sandshoes dacks choccy fairyfloss donger truckies stubbie

… and most unforgivable: vegemite!
