Pages saves your document as you work on it. To learn about saving and reversion, tap the the three horizontal dots in the upper right of Pages, then scroll down and choose “Pages Help”, then search for “save”.

I misunderstood you. The behavior you describe here (switching to Safari) is just fine.
What I thought you were saying was that your work on the document was "flipping back and forth between apps" - in other words, you were working in Pages, then editing the same document using, say, an Adobe application.
If Pages is the only application handling the document while it's open, then that's fine.

Oh, but my app still lost the text I typed... is there any reason this would happen? I was unable to restore it through undo/redo or anything like that either.
