how do I change the symbol(giraffe) when I log on?
How do I change the giraffe symbol to something else, when I sign in on my Mac Pro notebook?

Is that the symbol that shows up for your user ID? If you go to System Preferences/Users & Groups and select your account, does it show there? If so, hover your cursor over the symbol until you see Edit. You can make the change there.
If that isn't what you mean, more information would help.
