Creating a junction to move the device backup folder doesn't work with iTunes from the Windows Store

INFO: Using the latest version of iTunes on Windows 10 x64.

I was using the workaround of creating a junction to have my device backups moved to a different folder than the default one iTunes normally uses (%APPDATA%\Apple Computer\MobileSync\Backup), and it worked fine for the desktop version of iTunes for Windows.

Today I installed the Windows Store version of iTunes, and when I opened it the first time, iTunes told me it couldn't find my backups and that I would have to find the folder manually. It still opened Windows Explorer on the proper (junction) folder, but no matter in which way I try to recreate the junction (either as Administrator or as a regular user), iTunes just can't find the device backups.

Does anyone know why that is? And/or how to fix it? Ideally, of course, Apple would implement a way of moving that folder somewhere from within iTunes (much like we can do with the Library location), but it doesn't seem like anything like that is coming anytime soon. Am I just going to have to accept that I will have to leave my backups on my C: drive (which is an SSD and has limited space)?
