I have a new SSD external drive. It came formatted NFTS. I reformatted it to macOS Extended. I would like to format it to APFS but I'm not seeing that available in Disk Utility. Is there a trick to this?

It's possible that you need to "Show All Devices" in the popup menu above the disk list. If you then select the drive itself, not one of its volumes, it will give you the option. However, I don't know why you would have Mac OS Extended and not APFS.

I suspect—Once you format to extended journaled can you format to APFS on the fly.

You can't see it because the popup is open, but Partition is gray, which means I can't create a GUID part.
