Strange email on my phone
There has been a new email address: serrinaacquittal521@my.minbox.email
show up on my phone, I have no idea what this could be from, how can I remove it and how did it get there???

Are there any messages in the account? If you don't have a profile then either you are sharing an iCloud ID with someone who added the account to a different device, or your iCloud ID has been hacked. If you are sharing you shouldn't be, but ask any other users sharing that iCloud ID, and stop sharing iCloud IDs.
If you are not sharing an iCloud ID change your iCloud ID password immediately following these instructions: Change your Apple ID password - Apple Support
Then add 2 Factor Authentication to your iCloud ID: Two-factor authentication for Apple ID - Apple Support

Go to Settings/General. Scroll to the bottom and see if there is an entry for Profiles or Device Management, just below VPN. If there is, open it and delete the profile there. If there is one, you approved of a website or an app adding the profile and the account to your phone. Delete the app, as it is untrustworthy.
It was found under accounts and passwords section ... I don't share my ID, I also read somewhere that if you even just click on something, like an ad of some sort, and click ok without reading everything, it can add stuff, is this also correct?
Could this profile have been added without my "consent" just by clicking on an ad I thought was legit? I've seen other people talk about this "IMAP" stuff with something from "minbox.email"

It cannot be added without your consent. But if you're not paying attention it is easy to click "OK" when prompted.
IMAP is simply an email protocol that keeps your mail synced among all your devices. It has nothing to do with your rather strange issue.
It might have been an app, or might have been a website. Once you delete it you can delete the email account. There was no permanent harm done, and your data were not compromised. If you noted the info on the installed profile that would have been a strong hint on where it came from, because profiles must be signed with the actual service that installed it.
From the name on the account, serrinaacquittal521, it may have been a political, civil rights or law enforcement site or app you visited. I searched for serrinaacquittal521 and this is the only result that was even close.

Is this an email you received? Or do you mean if you go to Settings/Accounts & Passwords it is a new email account?
Does the address mean anything to you?

It is partly correct, but if that happens it will install a profile, which is what I had you check for.
Anyway, you should delete in in Accounts & Passwords and change your password.

Ok I did find it under the VPN ... I deleted it, so what happens now? How do I find what app could have been downloaded with it?
