Every time I take a screenshot and use the quick edit thumbnail to crop it, it works but then usually by the next day the crop is gone and the full screenshot is there? Happens to my iPhone 7, my brother gets the same problem as well

Make sure the iOS software on your iPhone's is up to date. They should be running version 11.3.1.
Tap Settings > General > Software Update
