Text in photo books

I have made photo books using iPhoto AND Photos for the last 10 years or so - so I thought I had a good grip on the flow.

Maybe something has changed.

For each layout of photos (1 photo per page, 2 photos per page) there used to be the option for text as well (text or no text)

I have tried several templates and most have little to no text available.

Am I missing something?
